Coconut Cream Pudding




This is my favorite low carb dessert: I always make it if I'm cooking for someone else and ';m trying to stay on track - they never guess it is diet food. :) Makes 4 servings. 4.9 carbs per serving.

Preparation time: 

1 hour


1⁄2 cup coconut meat (shredded, unsweetened)
3 packages splenda (or 1/4 cup of pourable)
4 ounces cream cheese (1/3 of UK 300g pack)
1 egg (beaten)
1⁄2 teaspoon vanilla extract
1⁄2 teaspoon almond extract


In bowl, mix 1/4 cup of cream with sweetener, extracts and coconut. Heat gently on stoevetop for 1 minute. Let stand for 15 minutes. In separate small bowl, beat egg with 1/4 cup of cream; set aside. Pour remainder of cream in sauce pan. Add cream cheese and cook on medium heat, stirring constantly, until cream cheese melts. Add coconut mixture and heat through. Add beaten egg mixture and stir constantly until thickened. Pour into 4 small ramekins and refrigerate at least 1 hour. Serve and enjoy!
