A quick and light salad to make, great with some barbecue wings on a summers day.
|4||cucumbers (sliced thinly)|
Cut cucumbers very thinly and mix with the salt. Let it marinate for 2 hours at room temperature, covered with some kitchen roll to keep the bugs out. After 2 hours, pour out the liquid from the bowl of cucumbers. Mix the vinegar, sweetener, dill, and pepper in with the drained cucumbers. Place in a sealed container and refirgerate for 3 hours.
