Serves 2-4
| 1 1⁄2 | Teaspoon | olive oil |
| 1 | red onion (sliced) | |
| 350 | Gram | potatoes (new/baby halved or quartered, cooked (12oz)) |
| 6 | eggs (lightly beaten) | |
| 115 | Gram | feta cheese (cubed, (4oz)) |

Saute onion 5 min till softened in heavy frying pan. Add potatoes and cook 5 min till golden. Spread mixture evenly over bottom. Preheat grill to to high. Season eggs, then pour over onion/potato. Sprinkle cheese over top and cook over moderate heat 5-6 min till eggs are just set and base is golden. Place pan under grill and cook top for another 3 minutes until set and golden. Serve warm or cold.
