Description

Serves 2-4

Ingredients

1 1⁄2Teaspoonolive oil
1 red onion (sliced)
350Grampotatoes (new/baby halved or quartered, cooked (12oz))
6 eggs (lightly beaten)
115Gramfeta cheese (cubed, (4oz))
  salt
  pepper

Instructions

Saute onion 5 min till softened in heavy frying pan. Add potatoes and cook 5 min till golden. Spread mixture evenly over bottom. Preheat grill to to high. Season eggs, then pour over onion/potato. Sprinkle cheese over top and cook over moderate heat 5-6 min till eggs are just set and base is golden. Place pan under grill and cook top for another 3 minutes until set and golden. Serve warm or cold.
