Chicken Madagascar




Great for something different - a little on the sweet side. Very easy to make.

Preparation time: 

15 minutes


4 chicken breasts (large, boneless)
1 clove garlic
1⁄4 teaspoon oregano (ground or dried)
  salt (to taste)
  pepper (to taste)
1⁄2 cup red wine vinegar
1⁄2 cup olive oil
1⁄2 cup green olives
2 cups capers
6 bay leaves
1 cup brown sugar (soft)
1 cup white wine (any)


for less sweetness, cut down brown sugar. I omit green olives because I don't like them-makes little diff.


In a large bowl, combine chicken, garlic, oregano, salt, pepper, vinegar, olive oil, olives, capers,and bay leaves. Marinate 3-5 hours or overnight.

In a baking pan, arrange chicken in a single layer with marinade. Sprinkle with brown sugar and pour white wine over whole mixture. Bake 50 minutes-1 hour at 350F, basting regularly.

I baked at 170c(fan-powered oven) for a little less than 50 min.
