A nice simple easy to make coffee cake that's great for breakfast or a simple dessert.
| 2 | Cup | flour (sifted) |
| 1⁄2 | Cup | sugar |
| 1 | Tablespoon | baking powder |
| 1⁄2 | Teaspoon | salt |
| 1⁄2 | Cup | butter |
| 1 | egg (beaten) | |
| 3⁄4 | Cup | milk |
| 1 | Cup | jam (or preserves, or 2 x 1/2 cup of 2 types) |
| sugar (for sprinkling on top) |
Sift together flour, sugar, baking powder and salt. Cut in butter to make a fine crumbly mixture. Add beaten egg and milk and combine until moist. The batter will be a rather thick, sticky dough. Turn out into well greased baking pan, about 9" square is a good size.
Spoon jam or preserves or dough and swirl around to distribute jam fairly evenly. Sprinkle sugar on top and bake at 400 degrees for 25 to 30 minutes or until top is golden and cake is set in the middle.
