Lovely, crunchy, cinnamon cookies.
| 1⁄2 | Cup | butter (or margarine, softened) |
| 1⁄2 | Cup | shortening (veg.fat) |
| 1⁄2 | Cup | sugar (plus 2 Tbsp for rolling) |
| 2 | eggs | |
| 1⁄2 | Cup | flour (all purpose/plain) |
| 2 | Teaspoon | cream of tartar |
| 1 | Teaspoon | baking soda |
| 1⁄4 | Teaspoon | salt |
| 2 | Tablespoon | cinnamon |
Note: this is an American recipe, but I have used British cups and it has turned out fine.
Pre-heat oven to 200C/400F. Mix thoroughly butter, shortening, 1 1/2 cups sugar and the eggs. Blend in flour, cream of tartar, baking soda and salt. Shape into balls bigger than a quarter, but smaller than a 50p.
Mix 2 tablespoons of cinnamon and 2 tablespoons of sugar together in a small bowl. Rough balled cookies in the cinnamon/sugar mixture and place 2 apart on an ungreased cookie sheet. Bake 8-10 minutes or until set. Remove immediately to wire rack or grease proof paper to cool.
Makes nearly 6 dozen.
