Garlic & Onion Roast Asparagus




An easy method of cooking asparagus, and a nice change from regular boiled. A Nigella Lawson adaptation.

Preparation time: 

20 minutes


1 bunch asparagus (about 25 stalks)
3 tablespoons olive oil (extra virgin)
1⁄8 onion (minced)
1 garlic (clove)
1 pinch salt
1 pinch pepper (to taste)


Preheat oven to 450.

On a large baking sheet, pour about 3 tbsp of olive oil. Add onion and garlic, mix with fingers. then place the asparagus on top, spread the bunch apart, and roll in the garlicky, onion-y oil to coat. Sprinkle with salt. Roast about 15 minutes (depending on thickness of asparagus) until wilty brown at the tips and soft.
