Hot Chicken Salad

Description: 

I make this super easy chicken salad and serve it hot over a bed of cool lettuce: it is fantastic! The specific spice I use is a Schwartz brand available in the UK.

Preparation time: 

30 minutes

Ingredients: 

2 chicken breast (boneless)
2 tablespoons sunflower oil
  Jamaican Jerk Spice (Schwartz')
  mayonnaise (as needed)
  lettuce (as needed)

Instructions: 

Chop the chick up and sautee it in sunflower oil, but use more oil that you actually need so that there’s actually liquid in the pan – this will help make the sauce. Probably about 2 Tablespoons more than you need? That’s a guess. Anyway, cook the chicken thoroughly and throw the spice in while it’s cooking, enough to coat the chicken. When it’s all cooked, pour the chicken into a bowl, still hot, and spoon in mayonnaise & stir until it’s the consistency you want to eat. The heated oil & mayonnaise & spice make a gorgeous dressing for the chicken. While it’s all still warm and toasty, dump it over a bed of lettuce.
