Spinach and Bacon Quiche

Description: 

A hearty quiche that is easy to do. Great for breakfast or dinner. Keeps well in the fridge and can be reheated.

Preparation time: 

30 minutes

Ingredients: 

6 eggs (large)
1⁄2 cup Heavy cream ((double cream))
  salt (to taste)
  pepper (to taste)
2 cups spinach (fresh, chopped and packed)
1 pound bacon (cooked and chopped (455g))
1 1⁄2 cups swiss cheese (shredded)
1 pastry crust (fitted in 9" pie plate)

Instructions: 

Combine eggs, cream, salt and pepper with mixer.

Layer the spinach, bacon and cheese in the bottom of the pie crust.

Pour egg and cream mixture over top. Bake at 375 degrees 35 to 45 minutes until set.

Can be stored in the refrigerator covered for a couple of days. Great to reheat in the morning for breakfast.
