Gooey Beef Burritos

A US recipe that can be converted easily. A bit lighter and more flavorful than the usual fajita or beef burrito. If you can't find mozzarella (we've found it as Tescos), use a very mild cheddar. It's nice just served with a salad, espcially if you put avocado in it!

Cottage Pie

Traditional British favorite meat and potato dish, with vegetarian version. Serves 4-6. Prep time: 30 min, cook time: 45-90 minutes depending on oven temp. Difficulty: med. Experiment with oven times before needing this on a deadline! Lovely with broccoli and peas.

This dessert is fantastic. It is a US recipe, but easily converted. When using the Splenda I used packets, which aren't available in the UK, so I estimated 1pkt - 1tablespoon of the pourable kind, and that seemed to work out alright.

Hot and hearty recipe that will warm you up on cold winter days. Very easy to make.

This is a quick and easy meal and really flexible depending on how many carbs you allow yourself. Yummmmmmmmmmmy!
